This is probably an American past time. (Ok, it is probably a world wide past time!) Yet, when one is faced with food sensitivities or are simply looking for ways to get the most nutrient density in their nutrition routine, one may think that this needs to be thrown out. Did you know that you can make one that is just as comparable in taste, offers numerous health, inflammatory and performance benefits and is completely allergen friendly? Look no further than these!
Recently, I have embarked in a modified paleo AIP protocol to push out the very last remnants of symptoms from a Fibromyalgia relapse and adrenal dysfunction back in January. Though I have seen a lot of amazing results in my triathlon journey this Summer, I knew I needed to kick the nutritional healing up a notch. Paleo AIP has been recommended for those that suffer from a plethora of autoimmune conditions from rheumatoid arthritis, long COVID and even Fibromyalgia. There have been studies demonstrating great results in patients after a course of 6 weeks on the protocol. My philosophy, you can adopt bits and pieces of a protocol and mold it into a unique, individualized plan for you. This particular approach takes away gluten, dairy, eggs, soy, peanuts, nuts(some AIP), nightshades, beans and grains but does not always have to be that strict. You are probably asking “what the heck is left for goodies?” Oh, there is plenty! Thus, these allergen-friendly cookies were birthed.
What do I like about them? These ingredients are clean and make for a delicious and nutritious combo. The coconut flour and oil provide medium chain triglycerides for energy production and monolauric acid, a potent anti-inflammatory and antimicrobial to give your system an immune boost. Other ingredients such as flax seed provide fiber for better gut health and omega three fatty acids to decrease inflammatory proteins generated in inflammatory diseases or from intense exercise, chocolate for antioxidant protection and recovery and sunflower butter as a source good source of vitamin E, another potent antioxidant used for protection from too much inflammation. I truly enjoy every bite of these and I hope that you enjoy them too!
